Spaghetti Sauce

Ingredients:
1/2 lb - 1 lb Italian Sausage
1-2 lbs. lean ground beef
2 small onions, chopped
2-3 cloves garlic, chopped
1 tsp. Italian herb seasoning
2 - 29 ounce cans tomato sauce
2 - 6 ounce tomato paste
2 - 14.5 ounce cans Italian-style diced tomatoes
1/2 tsp. dried thyme leaves
1/2 tsp. dried basil
1 tsp. dried oregano
2 tsp. sugar

Directions:
Brown sausage and ground beef in a large pot over medium heat. Once browned, drain off the grease. Add onions and garlic and continue cooking a few minutes until onions are translucent. Add seasonings and tomatoes and simmer over medium heat for 10 minutes until hot.

To Freeze:
Chill the sauce in the refrigerator until cool. Label freezer bags and then distribute the sauce into the freezer bags. A quart size freezer bags will give 4 adult size servings. To reheat you can either thaw the bags over night in the fridge and then heat in a crockpot (low 8 hours or high 4-6 hours) or stove top, or you can thaw bags in warm water until mostly thawed and then heat over a stove top or in crockpot.

BBQ Sauce

Ingredients:
1/2 cup ketchup
2 Tbsp. brown sugar
2 Tbsp. Worcestershire sauce
1 Tbsp. cider vinegar
1 dash hot pepper sauce
1 tsp. garlic powder
1/4 tsp. mustard powder
1/4 tsp. salt

Directions:
In a small saucepan over medium heat, combine all ingredients and bring to a simmer (stirring constantly). Remove from heat and allow sauce to cool slightly before using.

Chocolate Sauce

Ingredients:
4-5 squares dark chocolate, chopped
2 Tbsp. unsalted butter
2 Tbsp. corn syrup
1/2 cup brown sugar
1/2 cup heavy cream

Directions:
in a medium pot, heat all the ingredients until everything is melted (stirring constantly). Bring to a boil. Once boiling, remove pot from heat and serve warm over ice cream. Make about 1 + 1/2 cups.

Chocolate Mint Syrup

Ingredients:
6 ounces semi-sweet chocolate chips
3 Tbsp. butter
1/4 cup half & half or light cream
3/4 cup sugar
3 Tbso. light corn syrup
1/4 tsp. peppermint extract

Directions:
In a small pot, combine the chocolate chips and butter. Heat over med and stir till melted. Once smooth, add the half & half (or light cream), sugar, and light corn syrup. Boil gently over medium heat for 8 minutes, stirring constantly. After 8 minutes, remove pot from heat and add the peppermint extract. Stir till smooth and serve warm over cake and/or ice cream. Store leftovers in the refrigerator.

Caramel Sauce

Ingredients:
1/3 cup butter
3 Tbsp. Karo syrup
3/4 cup brown sugar
dash of salt
1 + 1/4 cups evaporated milk
1/2 tsp. vanilla

Directions:
In a medium sauce pan, combine the butter, Karo syrup, brown sugar and salt. Over medium heat, stir ingredients constantly until they are melted and smooth. Slowly add in the evaporated milk and vanilla. Stir ingredients till smooth and well heated. Serve warm over cake or ice cream.

Butterscotch Sauce

Ingredients:
1/2 cup brown sugar
1/2 cup heavy whipping cream
1/3 cup butter

Directions:
In a small pot, heat all ingredients on med/high until they are boiling, stirring them continuously. Once boiling, reduce the heat to med and simmer for 3 minutes. Serve hot over ice cream. Store in a refrigerator and reheat in a microwave.

Homemade Pizza



Pizza Crust Ingredients:
1 Tbsp. dry yeast
1 cup water, lukewarm
2 to 2 + 1/2 cups flour
1 + 1/2 Tbsp. sugar
1/2 tsp. salt
1 + 1/2 Tbsp. shortening

Pizza Sauce Ingredients:
1 (15 ounce) can tomato sauce
2  (6 ounce) cans tomato paste
2 tsp. dried oregano
2 tsp. dried basil
2 tsp. garlic powder
1 tsp. onion powder
1 tsp. ground sweet paprika
2 tsp. sugar
1/2 tsp. salt
4 Tbsp. olive oil
2 tsp. white vinegar
black pepper, to taste
1 tsp. worcestershire sauce

Directions for Pizza Sauce:
Combine all ingredients in a medium bowl.  Stir till well blended and spread on pizza crust.

Directions for Pizza Crust:
Preheat oven to 350 degrees. Dissolve yeast in the lukewarm water and set aside. Combine flour, sugar, salt, and shortening and stir with a fork till well blended. Stir in the yeast and water mixture until dough is soft and sticky. Divide dough into 2 balls. Roll out each ball on a greased pizza pan or baking sheet. Bake at 350 degrees for about 12 minutes and then remove from the oven. Cover dough with pizza sauce and toppings and bake for another 12 minutes (or until cheese is melted and the bottom of the crust is not doughy).

olives, sliced
sausage or hamburger, cooked
pepperoni
green peppers, diced
onions, diced
red peppers, diced
mushrooms, sliced
canadian bacon
