Honey Garlic Salmon

Ingredients:
12 ounces salmon (the Costco frozen fillets are 7 ounces, so make your sauce accordingly)
Salt & Pepper
cayenne pepper (optional)
1 T. olive oil
3 cloves garlic, minced
1/2 lemon, sliced

Sauce:
2 T. honey (42 g)
1 T. warm water
3/4 tsp. apple cider vinegar
3/4 tsp. lemon juice
pinch of salt

Directions:
Season your salmon fillets with salt, black pepper, and cayenne pepper (optional). Mix together the ingredients for the sauce and set aside. Heat up a skillet with the olive oil. Pan fry the salmon fillets until they are half way done. (I turn them once during this process.) While the salmon continues to cook, add the garlic and cook until the garlic is slightly browned. Continue cooking and add the sauce and the lemon wedges. Reduce your heat if the fish is cooking too quickly. Let the sauce reduce until it is sticky or resembles a syrup. (Again, I flipped the salmon over once during this process). Finish by broiling in the oven for 1 minute to give your fish a slight brown on the top. (This part is optional)

Time to Make: about 20 minutes
Difficulty: Easy if you know when salmon is cooked fully

Dad's Salmon

Ingredients:
4-6 Salmon Fillets (medium sized)
1/3 cup soy sauce
1/3 cup brown sugar
1/4 cup water
1/4 cup olive oil (vegetable oil works too)
Dash of garlic powder
Dash of lemon pepper

Directions:
Combine the soy sauce, brown sugar, water, and oil in a ziploc bag. Mix the ingredients around in the bag until the sugar feels more dissolved. Sprinkle the fish fillets with garlic powder, lemon pepper, and any other spices you may want. Add the fish to the marinade and place in the refrigerator for at least 1-3 hours (or longer). Heat your grill to medium high. Spray the grill with non-stick spray (don't spray the flame or you'll catch the oil on fire). Cook the fish 6-8 minutes each side until the fish is flaky and no longer raw looking. Tip: Sprinkle a little brown sugar on the fish when it is first put on the grill to get a yummy crust.

Time to Make: a few hours marinating plus 15 minutes on the grill.

Parmesan Salmon

Ingredients:
1/4 cup mayonnaise
2 Tbsp. parmesan cheese
1/8 tsp. red pepper (cayenne)
1 lbs salmon fillets (4 fillets)
2 tsp. lemon juice
ritz crackers, crushed (for topping)

Directions:
In a small bowl, mix together the mayonnaise, parmesan cheese, and red pepper. Preheat the oven to 400 degrees. Place the salmon fillets on a foil lined pan skin side down. Drizzle each of the fish with the lemon juice and top with the cheese mixture (spreading the cheese mixture evenly across the top). Top with the crushed ritz crackers. Bake at 400 degrees for 12-15 minutes. (Salmon is done when it flakes easily).
