Ingredients:
2 packages dry yeast
1/2 cup warm water
1 Tbsp. sugar
1/2 cup sugar
1 cup boiling water
1/2 cup butter
2 tsp. salt
3 eggs, beaten
4 + 1/2 cups flour
Directions:
In a small bowl, dissolve the yeast in the 1/2 cup warm water. Add the 1 T. sugar and set aside. In a large bowl add the 1/2 cup sugar, boiling water, butter, and salt. Stir till blended then add the eggs and mix well. Then add the yeast mixture and 2 cups of flour. Beat with a mixer until smooth. Add the remaining 2 + 1/2 cups of flour and mix by hand until blended. Let rise for 1 hour.
After 1 hour place the dough in the refrigerator until it is chilled. Once chilled, roll out dough on a lightly floured surface until it is thin (about 1/4 inch). Cut dough into 3-inch squares and fry in hot oil. Serve warm with honey or cinnamon butter.
Tip: Once the dough is cut into squares you can freeze them to use for the future. Just unthaw the dough at room temperature until it is completely thawed and then fry it in hot oil.

Sugar Top Muffins
Ingredients:
1 cup flour
1 cup quick oats
3/4 cup brown sugar
3/4 tsp. baking soda
3/4 tsp. baking powder
1 egg, beaten
3/4 cup milk
1/3 cup vegetable oil
1 cup chopped walnuts (optional)
cinnamon + sugar (for sprinkling the muffins)
Directions:
Preheat oven to 375 degrees. Combine the flour, oats, brown sugar, soda, and baking powder in a medium bowl and stir till well blended. Add the beaten egg, milk, and vegetable oil and stir till just blended. Add the walnuts and stir till mixed. Pour batter into a greased (or lined) muffin tin and sprinkle each muffin with cinnamon and sugar. Bake for 18 - 20 minutes.

Whole Wheat Pancakes
Ingredients:
1 cup whole wheat flour
dash of salt
1 tsp. baking soda
2 eggs
1 cup buttermilk
Directions:
In a medium bowl, combine all ingredients and stir till well blended. Drop batter onto a hot, greased griddle and brown both sides. Serve hot with maple syrup.

Ingredients:
2 + 1/4 cups flour
4 tsp. baking powder
3/4 tsp. salt
1 + 1/2 Tbsp. sugar
2 eggs
2 + 1/4 cups milk
1/2 cup vegetable oil

Directions:
Combine all ingredients in a medium bowl. Stir till well blended. Drop batter into a hot, greased waffle maker and bake till the waffle sensor indicates the waffles are done. Serve warm with maple syrup.

German Pancakes
Ingredients:
1/3 cup margarine
6 eggs
1 cup flour
1 cup milk
dash of salt
Directions:
Preheat oven to 400 degrees. Place the margarine in a 9x13 pan and place the pan in the oven while it preheats to melt the margarine. In a medium bowl, combine all the other ingredients and stir till well blended. Take the pan out of the oven when the margarine is melted and pour the batter into the pan. Do not mix the batter. Bake the pancakes at 400 degrees for about 25 minutes. Make sure the pancakes have a lot of room to rise. Serve warm with lemon juice, maple syrup, and powdered sugar.

French Pancakes
Ingredients:

2/3 cup milk
2 eggs

1/2 tsp. vanilla extract
Directions:
In a medium bowl, combine the flour, salt, baking powder, and powdered sugar. Mix till blended. Add the milk, eggs, water, and vanilla and stir lightly. Pour a small amount of batter on a hot, greased skillet. Brown both sides of the pancake. Top with powdered sugar before serving.

Farmer's Brunch Casserole
Ingredients:
3 cups frozen hash browns
3/4 cup shredded cheddar cheese
1 cup ham, diced
1/4 cup onion, diced
4 eggs, beaten
12 ounces evaporated milk
1/4 tsp. pepper
1/8 tsp. salt
Directions:
Preheat oven to 350 degrees. Grease an 8x8 pan and arrange the frozen hash browns on the bottom. Top the hash browns with the shredded cheese, ham, and onion. In a small bowl, combine the eggs, evaporated milk, pepper, and salt. Beat well with a spoon. Pour the mixture over the pan and bake at 350 degrees for 45-50 minutes. Let stand for 5 minutes before serving.
Tips: You can make this ahead of time and refrigerate it over night (unbaked), Just increase the baking time to 60-65 minutes.

Ingredients:
6 cups quick oats
1/2 cup brown sugar
3/4 cup wheat germ (or 1/2 cup wheat flour + 1/4 cup oatmeal)
1/2 cup coconut
1 cup slivered almonds
1/4 cup sunflower seeds
1/2 cup nonfat dry milk
2/3 cup honey
2/3 cup vegetable oil
2 Tbsp. water
1 + 1/2 tsp. vanilla extract
1 cup raisins (optional)
Directions:
Preheat oven to 300 degrees. Mix all ingredients in a large bowl till well blended. Spread mix on a large baking sheet. Sprinkle the granola with nutmeg and cinnamon before putting pan in the oven. Bake at 300 degrees for 25 minutes (stirring twice while baking). Cool on the pans and store in an airtight container.

Apple Turnover
Ingredients:2 + 1/2 cups flour
1 Tbsp. sugar
1 cup shortening
1 tsp. salt
1 egg yolk (save the white for later)
2/3 cup milk
2 handfuls of oatmeal
Apple Pie Filling
Glaze:
2 Tbsp milk
2 Tbsp. Butter
1 Cup Powdered Sugar
1 tsp. vanilla extract
Directions:
Combine and blend flour, sugar, shortening, and salt. Mix the egg yolk and milk together till smooth. Once the shortening is well blended, add the milk and egg to the flour mix. Stir till ingredients are blended (the more you mix the tougher the crust will be).
Roll out the dough into a square. Transfer dough onto a baking sheet. (It helps if you roll the dough out onto wax paper). Sprinkle 2 handfuls of oatmeal onto half of the dough. Spread the apple filling on top of the oatmeal. Fold over the top crust and seal the edges with a little bit of water. Beat the egg whites till foamy and brush onto the top crust. Cut slits into the top crust for steam vents. Bake at 350 degrees for 1 hour. Frost with glaze while warm.

Banana Bread
Preheat oven to 350 degrees.
In a large bowl mix: (leave batter slightly lumpy)
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
2 mashed bananas
Then add:
2 cups flour
1 tsp. baking soda
1/2 cup nuts (optional)
Pour batter in a greased bread pan and bake at 350 degrees for 1 hour. For muffins, pour batter into muffin pan lined with cupcake liners and bake for 20-25 minutes (until a toothpick comes out clean).
Makes 1 loaf or 15 muffins.
Difficulty: Easy
Time to make: 15 minutes or prep plus 20 minutes cook time (for muffins) or 1 hour (for bread).
